Chicken and Pasta Primavera Recipe | |

Ingredients:
1 pound vermicelli3 tablespoons butter 1/2 cup grated Parmesan cheese 1/4 cup olive oil 1 clove garlic, peeled and minced 2 boneless chicken breasts, cut into thin strips 3/4 cup tomato sauce 3/4 cup chicken broth Salt and pepper to taste 2 cups broccoli florets 1 cup sliced zucchini 2 carrots, sliced 1 red pepper, seeded and sliced
Directions:
1. Cook vermicelli in boiling, salted water following package directions; drain. Toss with butter and Parmesan cheese. 2. While vermicelli is cooking, heat oil in saucepan. Add garlic and chicken; saute until browned. Add all remaining ingredients, mixing well. Simmer for 10 minutes, stirring occasionally. 3. Place vermicelli in heated serving bowl. Spoon chicken on top, and serve at once. |
