Other spices may be added to suit personal tastes such as allspice, nutmeg, or ground cloves.


  • 2 egg whites
  • 1/2 cup sugar
  • Dash salt
  • 1/2 teaspoon cinnamon
  • 2 cups pecans


Beat egg whites until stiff. Add remaining ingredients and mix well to coat all of the pecans. Pour into a shallow baking pan (buttered pan or sprayed with Pam) and bake at 225 degrees for about 1 hour. Remove to waxed paper while still warm. Cool. Break into individual pieces and store in an airtight container.
