Halibut Brandade Recipe

Ingredients:

  • 6 cups finely flaked cooked halibut
  • 1 1/2 cups mayonnaise
  • 3/4 cup oil
  • 3 garlic cloves, minced
  • 3 cups mashed potatoes
  • 2 tbs. butter
  • Cayenne pepper
  • 1 1/2 tsp. salt

Directions:
Combine halibut, mayonnaise, oil, garlic, salt, and a few grains of cayenne. Mix thoroughly. Place mixture in shallow casserole and top with mashed potatoes. Dot potatoes with butter. Bake in a moderate oven (350 degrees) fot thirty minutes or until potatoes are browned. Serve at once.

Serves 6.
