I also fell in love with kaiserschmaren the first time I ate it.


  • 1 cup plus 2 tbs flour
  • 1 pinch salt
  • 3 egg yolks
  • 1 tbs sugar
  • 2/3 cup cold milk
  • 2 tbs raisins
  • 1 tbs baking powder
  • 1 tsp vanilla
  • 3 egg whites
  • confectioner sugar
  • 1 tbs butter
  • butter


Place flour,baking powder, sugar and salt in a bowl. Blend egg yolks, vanilla and milk and stir into flour to combine. Add the raisins. Melt the butter in a frying pan and pour in the batter. Cook over medium high heat for 3 minutes then turn down heat and continue cooking until golden on one side. Turn the pancake, adding more butter to the pan . Shred it into large pieces. Continue cooking over very low heat for another 8 minutes. Serve sprinkled with confectioner sugar and warm jam.
