Ingredients

  • 1 cup uncookded brown rice
  • 1 1/2 lbs. lean ground beef
  • 1/2 small onion, chopped
  • 1 cup chopped celery
  • 2 tablespoons chopped green pepper
  • 1 (10 3/4 oz) can cream of chicken soup, undiluted
  • 1 (10 3/4 oz) can cream of mushroom soup, undiluted
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 2 tablespoons butter or margarine
  • 1 (4-oz) can sliced mushrooms, drained
  • 1 (2-oz) package slivered almonds

Directions

Prepare rice according to package directions; set aside.

Brown ground beef and next 3 ingredients in a large skillet, stirring until beef crumbles; drain.

Combine ground beef mixture, rice, chicken soup, and next 3 ingredients in a large bowl; spoon into a lightly greased 13X9X2 baking dish.
Bake @ 325 d. for 1 hour.

Melt butter in a small skillet over medium-high heat; add mushrooms and almonds, and cook until almonds are lightly browned. Sprinkle over casserole; serve immediately.


Yield 6 to 8 servings.
