Ingredients

  • 1 lb. lean ground beef
  • 1 tablespoon vegetable oil
  • 1/4 cup diced onion
  • 2 tablespoons flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 cup beef broth or stock (canned or a packet of
  • beef broth mix in a cup of hot water is fine.)
  • 1 cup thinly sliced carrots
  • 1/2 cup sliced celery
  • 2 cups fluffy, seasoned mashed potatoes
  • 1 can Durkee's onion rings

Directions

Brown beef and onion in oil; stir in flour, salt and pepper. Cook until flour is browned, stirring constantly. Stir in beef broth; cook and sti until thickened. Add carrots and celery. Turn into a greased casserole dish. Top with mashed potatoes, spooning them lightly on top.

Bake at 350 degrees for 30 minutes. Top with onion rings, bake 10 - 15 minutes more until onions are browned.
