• 1 roll
  • 1 pound ground meat, mixed beef and pork
  • 3 potatoes, cooked and mashed
  • 2 anchovies, chopped
  • 1 egg
  • flour, to bind
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 1 cup beef stock
  • capers
  • juice of 1/2 lemon
  • salt and pepper


Soak roll in water, squeeze dry and break up. Add meat, potatoes, anchovies, egg and flour to bind. (Another recipe for these calls for diced onion also.) Knead mixture for 5 minutes; shape into balls. Tumble in flour and drop into salted hot water. From butter, flour and beef stock, prepare a light sauce. When smooth, add capers and lemon juice. Season and bring to a boil. Let meat balls soak briefly in this beore serving. Serve with potatoes.

Serves 4.
