Ingredients:
1 roll1 pound ground meat, mixed beef and pork 3 potatoes, cooked and mashed 2 anchovies, chopped 1 egg flour, to bind 3 tablespoons butter 2 tablespoons flour 1 cup beef stock capers juice of 1/2 lemon salt and pepper
Directions:
Soak roll in water, squeeze dry and break up. Add meat, potatoes, anchovies, egg and flour to bind. (Another recipe for these calls for diced onion also.) Knead mixture for 5 minutes; shape into balls. Tumble in flour and drop into salted hot water. From butter, flour and beef stock, prepare a light sauce. When smooth, add capers and lemon juice. Season and bring to a boil. Let meat balls soak briefly in this beore serving. Serve with potatoes.Serves 4.
