Ingredients

  • 2 cups milk
  • 2 eggs
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 1 cup heavy cream
  • 1 cup Freddie's Fig Preserves(see recipe of 8/28/1997)

Directions

Scald the milk. Meanwhile, beat the eggs and sugar together until lemon-colored. Add a little of the milk to the mixture to heat it, then pour into hot milk, stirring all the while. Continue to cook over very low heat (or in a double boiler) about 10 minutes, or until thickened. Whip cream and fold in. Mix in preserves.

Pour into ice-cream freezer and freeze according to manufacturer's directions.


Makes about 1 quart.
