Rumanian Sauerkraut Soup Recipe

Ingredients:

  • 1/2 c. diced carrot
  • 1/2 c. snipped fresh parsley
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 3 1/2 c. (1 lb. 11 oz can) sauerkraut, drained
  • 2 cans beef consomme
  • 2 soup cans water
  • 4 c. tomato juice
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 3 tbsp uncooked rice

Directions:
Combine all ingredients in large kettle. Mix well. Simmer, covered, for 1 hour. Serve with sour cream if desired.


Makes about 2 quarts, or 6 servings.
