Ingredients

  • 250g Butter (not Margarine)
  • I Cup White Sugar
  • 1/2 Cup Light Brown Sugar
  • 1/2 Cup Peanut Butter
  • Zest Of One Lemon
  • 1 Tsp Vanilla Essence
  • 2 1/2 Cups Self-raising Flour
  • 1 Egg

Directions

Cream butter, vanilla, lemon and sugars until fluffy. Add egg and incorporate. Beat in peanut butter until well mixed and then fold in flour until a soft but not sloppy mixture forms. If too soft add more flour. Roll into balls and place on a greased oven tray. Dip a fork in some flour and make a criss-cross pattern on each one. Bake for ten minutes in a moderate oven and cool on a rack.
