Ingredients:

  • 12 oz. can tomato juice (I like V-8)
  • 3 med. tomatoes, peeled, seeded & chopped
  • 2 tbsp fresh lemon juice
  • 1/2 tsp garlic salt
  • 1/4 tsp fresh ground pepper
  • Hot sauce to taste
  • 1 med. cucumber, peeled and finely chopped
  • 1 med. green pepper, finely chopped
  • 1/2 c. celery, finely chopped
  • 1/3 c. minced green onions
  • Cucumber slices

Directions:
Combine first 6 ingredients in container of electric blender; process till smooth. Combine tomato mixture, chopped cucumber, green pepper, celery and green onions; chill thoroughly. To serve, ladle soup into chilled bowls; garnish with thin cucumber slices.

6 servings. (about 43 calories per serving.)
