- * 450 grams (1 lb) of linguini
- * 30 ml (2 tablespoons) of tomato paste, preferably Italian
- * 3 garlic buds, peeled and thinly sliced
- * 250 ml (1 cup) of Italian parsley (flat), finely chopped
- * 190 ml high quality extra-virgin olive oil
- * 15 ml (1 tablespoon) red pepper flakes (optional)
- * 1 cup grated Reggiano Parmesan
- * Freshly ground black pepper (to taste)
Directions
Cook the pasta al dente. Drain without rinsing!
Mix all the other ingredients and pour over the pasta.
