A boat neighbor, Gene Boone, Suggested that this was a way he liked sweet potatoes. We had them with steak and salad. It was like having desert with the main course. I loved them, and I'm not a big sweet potato fan. You can also place the filling into a casserole then spirinkle with the chopped nuts. Finish with a few extra pats of butter after you've taken it out of the oven.
Ingredients
- 4 Medium Sweet Potato
- 1/4 Cup Maple Syrup, Grade "B" Dark Amber
- 1/4 Cup Dark Brown Sugar
- 1 Teaspoon Cinnamon
- 1/2 Stick Salted Butter, softened
- Chopped Pecans, optional
Directions
1. Bake the potatoes in a 400 degree oven for about 1 hour. Be sure to both wash and prick them with a fork them prior to cooking, or they'll explode on you. .
2. When the potatoes are done, Take them out and turn the oven to broil while you are working the potatoes.
3. Carefully cut the tops off of the potatoes , and scoop out the insides into a heat proof bowl. Add the butter, dark brown sugar, maple syrup, and cinnamon and mash (mix) well with a fork.
4. Fill the shells with the mix, sprinkle with the chopped pecans (if using), and place on a pan under the broiler for about 10 minutes. Do this just before you're ready to eat and serve them immediately.
