American Vegetable | |
Ingredients:
4 Medium Sweet Potato1/4 Cup Maple Syrup, Grade "B" Dark Amber 1/4 Cup Dark Brown Sugar 1 Teaspoon Cinnamon 1/2 Stick Salted Butter, softened Chopped Pecans, optional
Directions:
1. Bake the potatoes in a 400 degree oven for about 1 hour. Be sure to both wash and prick them with a fork them prior to cooking, or they'll explode on you. .2. When the potatoes are done, Take them out and turn the oven to broil while you are working the potatoes. 3. Carefully cut the tops off of the potatoes , and scoop out the insides into a heat proof bowl. Add the butter, dark brown sugar, maple syrup, and cinnamon and mash (mix) well with a fork. 4. Fill the shells with the mix, sprinkle with the chopped pecans (if using), and place on a pan under the broiler for about 10 minutes. Do this just before you're ready to eat and serve them immediately. A boat neighbor, Gene Boone, Suggested that this was a way he liked sweet potatoes. We had them with steak and salad. It was like having desert with the main course.
I loved them, and I'm not a big sweet potato fan.
You can also place the filling into a casserole then spirinkle with the chopped nuts. Finish with a few extra pats of butter after you've taken it out of the oven.
