Ingredients

  • Ripe Plantains (black, figure 1/2 per person
  • Butter
  • Oil

Directions

Cut plantains in half. Score skin lengthwise and peel off. Cut plantain lengthwise into planks or quarters.
Over Med-Low to Med heat in skillet start melting half butter and half oil, enough to generously cover the bottom of your skillet. Add plantains and fry until a very deep golden brown. Serve immediately, just right with black beans and rice!
