Ingredients

  • Here's the way we prepare lechon asado con mojito (roast pork with lemon-garlic sauce).
  • Marinade:
  • juice of 6 lemons (you want 1 cup juice)
  • 1/2 cup dry sherry
  • 12 cloves garlic, chopped fine
  • 2 tbs. olive oil
  • 2 bay leaves
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. crushed red pepper

Directions

Combine ingredients and pour over meat. I suggest you use a 1-gallon ziploc bag. Place in refrigerator overnight for best results. Pour off the marinade into a saucepan, simmer 15 minutes, and use a table sauce.
