- Here's the way we prepare lechon asado con mojito (roast pork with lemon-garlic sauce).
- juice of 6 lemons (you want 1 cup juice)
- 1/2 cup dry sherry
- 12 cloves garlic, chopped fine
- 2 tbs. olive oil
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp. black pepper
- 1/2 tsp. crushed red pepper
Combine ingredients and pour over meat. I suggest you use a 1-gallon ziploc bag. Place in refrigerator overnight for best results. Pour off the marinade into a saucepan, simmer 15 minutes, and use a table sauce.
