  Spanish Pork

Ingredients:
Here's the way we prepare lechon asado con mojito (roast pork with lemon-garlic sauce).

Marinade:

juice of 6 lemons (you want 1 cup juice)
1/2 cup dry sherry
12 cloves garlic, chopped fine
2 tbs. olive oil
2 bay leaves
1 tsp dried oregano
1 tsp salt
1/2 tsp. black pepper
1/2 tsp. crushed red pepper

Directions:
Combine ingredients and pour over meat. I suggest you use a 1-gallon ziploc bag. Place in refrigerator overnight for best results. Pour off the marinade into a saucepan, simmer 15 minutes, and use a table sauce.
