- Cake ~
- 1 yellow or lemon cake mix
- 4 eggs ¾ c. oil
- 1 sm. package lemon gelatin
- 1 c. hot water
- 1 T. lemon juice or ½ t. lemon extract (if yellow cake mix used)
- Glaze ~
- 1 c. confectioners' sugar
- ½ t. lemon extract
- 1 T. water
Directions
Cake ~
Preheat oven to 350 degrees.
Mix cake mix, oil, gelatin mix, and hot water, then add eggs one at a time.
Add lemon juice or extract.
Bake in well-greased and floured tube or bundt pan at 350 for 40 - 45 minutes or until cake springs back when pressed and toothpick or straw inserted is dry when removed.
Glaze when still slightly warm or dust with confectioners' sugar.
Glaze ~
Mix ingredients until smooth and spoon over cake.
