A quicker but less delicate cranberry vinegar. This makes a relatively bitter vinegar. Try tasting prior to cooling and adding sugar to taste. If the vinegar needs to be clarified, restrain and bring it to a boil. Wash bottle before returning to the bottle.

Ingredients

  • 2 c. cranberries (fresh or frozen)
  • about 3 Tb. sugar
  • 3 c. rice vinegar
  • sealable glass bottle (about 3 cups)

Directions

Bring sugar, cranberries, and vinegar to a boil. Simmer until cranberries pop--approximately 5 minutes. Cool. Strain through fine mesh. Seal in glass bottle. Keep at room tempreture.
