Ingredients

  • 1 Rack of lamb (fat trimmed, bones cleaned)
  • Salt
  • Pepper
  • 1 T Dijon mustard
  • 1/2 c Seasoned bread crumbs
  • 1 T Parsley (chopped fine)
  • 1 t Dried basil leaves
  • 1 t Dried oregano leaves
  • 1 t Garlic (minced fine)

Directions

Preheat oven to 400°
Season lamb with salt and pepper. Spread the mustard evenly over the meat. Combine the remaining ingredients together in a bowl. Spread the herb and bread crumb mixture evenly over the mustard. Roast in preheated oven until meat thermometer registers 135 degrees. Remove from oven and let rest for 5 minutes. Slice into single rib portion.
