Ingredients:
1 Rack of lamb (fat trimmed, bones cleaned)Salt Pepper 1 T Dijon mustard 1/2 c Seasoned bread crumbs 1 T Parsley (chopped fine) 1 t Dried basil leaves 1 t Dried oregano leaves 1 t Garlic (minced fine)
Directions:
Preheat oven to 400°Season lamb with salt and pepper. Spread the mustard evenly over the meat. Combine the remaining ingredients together in a bowl. Spread the herb and bread crumb mixture evenly over the mustard. Roast in preheated oven until meat thermometer registers 135 degrees. Remove from oven and let rest for 5 minutes. Slice into single rib portion. serves 8
