Ingredients

  • 16 oz canned tomatoes, diced
  • 1 cucumber, peeled and finely chopped
  • 1 green pepper, cleaned and finely chopped
  • 1/4 c. onion, finely chopped
  • 1 clove garlic, diced
  • 2 t. fresh parsley, finely chopped
  • salt - to taste
  • pepper - to taste
  • 1/2 c. Wishbone Italian Dressing
  • 16 oz. tomato juice
  • Garnish:
  • 6 t. sour cream
  • croutons
  • watercress

Directions

Place all of the ingredients in a large bowl and mix well. Chill until ready to serve. Place gazpacho into individual serving bowls. Top with 1 teaspoon of sour cream. Lay croutons on side of soup. Garnish with a sprig of watercress.


Makes 6 portions.
