• 1-1/2 Lb Ground beef
  • 1/2 Lb Ground Pork
  • 2 T olive oil
  • 1/2 C. minced onion
  • 1/2 C. shredded carrots
  • 4 bay leaves
  • 4 twists of pepper
  • 3 T. tomato paste
  • 1 C. red wine
  • 1- 28oz whole tomato
  • hot water
  • 1/2 C. celery
  • salt


Saute onions and a pinch of salt in the heated oil, add carrots and a pinch of salt. Cook until dry and begins to caramelize. Add 1/2 t. salt to abet this. Add bay leaves and a pinch of salt. Add peppr,tomato paste and stir, add wine and cook until almost dry. Crush 3 ladles of tomatoes and add 3 ladles of boiling water. Simmer 2-3 hours or longer if you prefer, adding more boiling water as needed. Cook to your desired consistency.
