It's been awhile since I've made these, and I submitted the recipe from memory. Hope everything is correct and that if you choose to try them they turn out great!

Ingredients

  • Crust: 1 cup butter, barely softened; 2 cups flour; 1/3 cup powdered sugar; dash salt
  • Topping: 4 eggs, 2 cups sugar, 1/4 cup flour, 1/3 cup lemon juice, lemon zest to taste

Directions

Preheat oven to 350 degrees. For crust: Combine sugar, flour and salt. Cut in butter. Pat onto bottom of greased 13 x 9 baking. Bake 7-10 minutes. For topping: Beat eggs. Blend in sugar and flour. Add juice and zest. Pour over crust. Bake about 20 minutes or until set. When cooled, sprinkle with powdered sugar.
