Ingredients

  • 2 cups mashed Russet potatoes
  • 1 (8 oz.) pkg. cream cheese, softened
  • 1 onion, chopped
  • 2 eggs, beaten
  • 1 tbsp. all-purpose flour
  • 1/4 tsp. salt
  • 1/8 tsp. ground black pepper
  • 1/2 can French-fried onions

Directions

Preheat oven to 300F. Grease a 1 - 1/2-quart casserole dish. Combine mashed potatoes, cream cheese, onions, eggs, flour, salt and black pepper in a bowl of an electric mixer. Beat 2 to 3 minutes at medium speed. Pour into prepared casserole dish. Spread fried onions evenly over the top. Bake uncovered for 30 to 35 minutes.
