Roast Rack of Lamb Recipe

Ingredients:
rack of lamb
1 tbsp olive oil
1 tbsp wholegrain mustard
2 teasp hot English mustard
1 tbsp sweet chilli sauce
4 cloves crushed garlic
1 teasp salt
2 teasp black ground pepper
1 tbsp dried basil
1 tbsp dried mixed herbs
1 teasp dried thyme

Directions:
mix together oil, mustards, garlic & chilli sauce into a paste. With your fingers, rub the mix over the lamb, covering all sides of the meat. Mix together the salt & pepper, basil, mixed herbs & thyme & coat the lamb with the mixture. Preheat oven to 190deg Celcius. Place lamb in roasting pan, & roast uncovered for approx 30 - 40 minutes, depending on how you like it cooked.

Serve with mint jelly, roast vegetables, or a fresh salad for a lighter meal.
Enjoy! 30 minutes will cook the rack so that it is still pink in the middle - the only way to eat it!
