I make these individually for 2 or in a 10-inch pie dish for 4.

Ingredients

  • 1 Apple
  • 1 t Maple syrup
  • 1 t Apple juice
  • 1 t non-GMO, non-transfatty acid margarine
  • 1/4 t cinnamon
  • pinch of clove
  • 1 t coarsely chopped walnuts

Directions

Preheat oven to 350 degrees

Lightly grease a ramikin or small baking dish. I bake one apple for myself in a ramekin or a few in a glass pie dish.

Core apple, being sure to remove seeds. Peel approximately 1 to 2 inches of peel from the top of the apple. Place in baking dish.

In a small bowl combine maple syrup, cinnamon and clove. Pour over apple making sure to get ingredients into center hole. Dab top with margarine and walnuts.

Bake for 20-25 minutes, or until soft.


Serve as is, or with rice or soy-based ice cream.
