Ingredients

  • 2 cups sugar
  • 1 1/4 cups oil
  • 4 eggs, slightly beaten
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • 1/2 cup chopped nuts
  • 1/2 cup raisins

Directions

Preheat oven to 350 degrees. Grease muffin tins or line with paper baking cups. Beat sugar and oil in a large bowl. Beat in eggs. Combine dry ingredients; Gradually stir into egg mixture, just until well combined. Fold in carrots, nuts and raisins. Spoon batter into prepared muffin tins, filling about 2/3 full. Bake 25 to 35 minutes until muffins test done. Serve warm. 2 1/2 dozen muffins.
