Ingredients

  • 1 to 2 pounds fresh spinach, torn
  • 1 medium red onion, chopped
  • 1/2 head lettuce, torn
  • Two 11-ounce cans mandarin oranges, drained
  • Dressing Ingredients:
  • 1-1/2 cups sugar
  • 1 teaspoon dry mustard
  • 1 cup white vinegar
  • 1 teaspoon salt
  • 2 eggs, beaten frothy

Directions

Combine the dressing ingredients, bring to a boil and boil for 1 minute. Prepare and chill. Toss with salad right before serving.
