Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 3 tablespoons cocoa
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 1/3 cup vegetable oil
  • Macaroon Filling:
  • 1 cup flaked coconut
  • 1/4 cup sweetened condensed milk
  • 1/4 teaspoon almond extract
  • Combine,mix well.

Directions

Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk, and oil; add to dry ingredients, stirring just until moistened. Spoon batter into greased muffin pans, filling one-third full. Spoon 2 teaspoons Macaroon Filling in center of each muffin cup; spoon remaining batter over top, filling each muffin cup two-thirds full. Bake at 400 degrees for 20 minutes. Serve warm. Yield: 1 dozen.
