Ingredients:
2 cups all-purpose flour1/2 cup sugar 3 tablespoons cocoa 1 tablespoon baking powder 1/4 teaspoon salt 1 egg, beaten 1 cup milk 1/3 cup vegetable oil Macaroon Filling: 1 cup flaked coconut 1/4 cup sweetened condensed milk 1/4 teaspoon almond extract Combine,mix well.
Directions:
Combine first 5 ingredients in a large bowl; make a well in center of mixture. Combine egg, milk, and oil; add to dry ingredients, stirring just until moistened. Spoon batter into greased muffin pans, filling one-third full. Spoon 2 teaspoons Macaroon Filling in center of each muffin cup; spoon remaining batter over top, filling each muffin cup two-thirds full. Bake at 400 degrees for 20 minutes. Serve warm. Yield: 1 dozen. |
