Tsatziki can also be made by thinly slicing cucumber and garlic rather than putting the ingredients through a blender. Delicious served on toasted pita bread wedges, Gyros and or a salad dressing.
Ingredients
- 2 cloves garlic, mashed
- 1 cucumber, seeded,sliced thinly, and drained
- 1/2 pint plain yogurt, drained
- 2 tsp. extra virgin olive oil
- Juice of half a lemon
- 1/2 tsp. fresh dill
- 1/2 tsp. fresh mint
- salt & pepper to taste
Directions
Combine garlic, cumcumber and yogurt in blender. Add remaining ingredients. Store in refrigerator until ready to serve
