Lobster roll with tarragon Recipe

  Salad

    




Ingredients:
8 oz chilled, fresh cooked lobster meat, cut into 1/2 inch pieces.
2T minced celery
1/2 t minced fresh tarragon leaves
1/8 t salt
1/8 t black pepper
1 t lemon juice
2 - 3 T mayo
4 hot dog roll, lightly toasted
1 t unslated butter, melted

Directions:
mix lobster, celery, tarragon, salt, pepper and lemon juice. Fold in 2 T of mayo. Add more if dry. Brush sides of rolls with butter and toast. Fill with 1/3 cup salad. Serve immediately.

Serves 4
