This can be baked in a pie shell. Saute a little onion in butter and add to mixture.

- 2 1/2 lbs. potatoes
- salt
- pepper
- parmesan cheese
- 3 eggs
- 1 cup cream
- chives, thyme & parsley
- Peel, par-boil and thinly slice the potatoes. Line a loaf pan with greased foil and then layer the potatoes, seasoning each layer & sprinkling with a little grated cheese.
- Beat the eggs with the cream & plenty of finely chopped herbs. Pour the cream mixture over the potatoes and grate more cheese on top. Bake at 375 degrees for an 1 to 1 1/2 hours. Turn out of the pan and slice.
