Ingredients
- 1 cup white rice
 - 1 1/2 cup chicken stock
 - 2 tsp. lemon juice
 - 1/4 tsp. salt
 - 1 cup water
 - 1 tsp. lemon rind - grated
 - 2 Tbls. chopped fresh parsley
 
Directions
In a large saucepan, combine all ingredients, except parsley: bring mixture to a boil, stirring once or twice. Lower heat, cover tightly and simmer for 15 minutes or until liquid is absorbed. 
 Stir in parsley and serve.
