Ingredients:
1 cup white rice1 1/2 cup chicken stock 2 tsp. lemon juice 1/4 tsp. salt 1 cup water 1 tsp. lemon rind - grated 2 Tbls. chopped fresh parsley
Directions:
In a large saucepan, combine all ingredients, except parsley: bring mixture to a boil, stirring once or twice. Lower heat, cover tightly and simmer for 15 minutes or until liquid is absorbed. Stir in parsley and serve. |
