Ingredients
- 1 medium yellow onion, diced
 - 1 green bell pepper, diced
 - 1 tablespoon olive oil
 - 1 medium tomato, diced or 1 cup canned, diced tomatoes
 - 2 cups cooked black beans or 1 15-ounce can
 - 1 tablespoon vinegar or ketchup
 
Directions
Saute onions and pepper in oil until soft. Add tomato, beans and vinegar and heat until cooked through. Serve on top of, or mixed in with, white rice. Makes 4 servings.
