BLACK BEANS AND RICE Recipe

  Rice

Ingredients:
1 medium yellow onion, diced
1 green bell pepper, diced
1 tablespoon olive oil
1 medium tomato, diced or 1 cup canned, diced tomatoes
2 cups cooked black beans or 1 15-ounce can
1 tablespoon vinegar or ketchup

Directions:
Saute onions and pepper in oil until soft. Add tomato, beans and vinegar and heat until cooked through. Serve on top of, or mixed in with, white rice. Makes 4 servings.
