I LOVE this recipe for German Potato Salad! It's a favorite of mine with a Reuben sandwich and a nice dill pickle!!!!!
Ingredients
- 1 1/2 lbs. potatoes, halved
- 3 slices bacon
- 1 med. onion, chopped (1/2c)
- 1 Tbs. flour
- 1 Tbs. sugar
- 1 tsp. salt
- 1/4 tsp. celery seed
- dash of pepper
- 1/2 c. water
- 1/4 c. vinegar
- salted water
Directions
Heat enough salted water to cover potatoes to a boil. Add potatoes. Bring to boil again, reduce heat. Cover & cook til tneder (about 20 minutes). Drain & cool. Fry bacon, drain well. Cook & stir onion in bacon grease til tender. Stir in flour, sugar, salt, celery seed, pepper. Cook over low heat stirring constantly until mixture is bubbly; remove from heat. Stir in water & vinegar. Heat to boil, stirring constantly. Boil & stir 1 minutes. Remove from heat. Crumble bacon into hot mixture, then slice in warm potatoes. Cook, stirring gently to coat slices, til hot & bubbly. Serve hot.
