Ingredients

  • 1 3/4 cups flour
  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 3 eggs
  • 1 cup canned crushed pineapple
  • 1 cup coconuts
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2 cups shredded, carrots
  • 1 cup chopped walnuts
  • 1 teaspoon vanilla
  • Beat together eggs, sugar, vanilla and oil. Stir in flour,salt, B.S., and cinnamon. Fold in drained pineapple, coconut,carrots and walnuts. Grease a bundt cake pan or a 13"x9"x2" pan. Bake at 350 degrees for 1 hour. Cool completely.

Directions

CREAM CHEESE FROSTING:
8-oz cream cheese
1/2 cup softened butter 2 tsp. vanilla
1 box confectioners sugar
Cream together first 3 ingredients. Stir in sugar and beat until smooth.
