Broiled Scallops w/Tarragon-Lime Butter Recipe

Ingredients:

  • 1/2 LB. SEA SCALLOPS
  • 1/4 t. HOT PAPRIKA
  • SALT/PEPPER
  • 2 T Unsalted Butter
  • 1 shallot, peeled and sliced
  • 1 T minced fresh tarragon leaves or 1 t. dried.
  • Juice of 1 lime

Directions:
Pre-heat Broiler
Lightly grease baking sheet or coat w/nonstick cooking spray.
Season scallops w/paprika, salt, pepper to taste. Place under broiler, about 3" from heat and broil 2-3 minutes per side or until firm and lightly browned. Remove immediately and keep warm.
Sauce: Melt butter in small pan. Add shallot and saute over low heat 2-min. Stir in Tarragon, lime juice, S&P to taste. Serve over scallops.



This is a very good dish; easy to prepare. If you haven't tried tarragon, you will love it!
