enjoy and don't set your table on fire (yes, I've done that)
Ingredients
- 1/2 pound grated Gruyere cheese
- 1/2 pound grated Emmentaler cheese
- 1/4 pound Appenzeller or Comte cheese
- 2 tablespoons corstarch
- 1 clove garlic peeled
- 2 cups dry white wine, I like rieslings or chardonays
- Kirschwasser (cherry brandy) to taste
- pepper
- nutmeg
- good bread in whole loves cut into chunck. I like sourdough or dark rye
- optional dipping ingredients:
- asparagus
- green apples
- baby potatoes
Directions
Mix grated cheese with corn starch in large bowl
rub fondue pot with peeled garlic
add wine
bring to boil
slowly add cheese a little at a time waiting for it to melt before adding next handful
when all melted add kirshwasser to taste - about 4 tablespoons
add pepper and nutmeg right before serving
transfer to table on stand filled with alcohol and on fire
dip bread as well as other ingredients
serves 4 as main meal
serve with thin slices of dried beef for an appetizer and a fruit salad and sorbet for desert
this is a heavy meal so it doesn't need much else
