Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups grated zucchini
  • 3 tsp. Vanilla
  • 3 cups flour
  • 1 tsp. Salt
  • 1 tsp. Soda
  • 3 tsp. Cinnamon
  • 1/2 tsp. Baking powder
  • 1 cup chopped nuts

Directions

Beat eggs until light and fluffy. Add oil, sugar, zucchini, and vanilla, mix lightly, but well. Mix nuts in the flour and add remaining ingredients and mix well. Pour into 2 greased 9X5X2 Loaf pans. Bake 325 for one hour or until tests done. Remove from pan and cool on rack. Muffins take 20 minutes.
