Spices are aprox. Do not worry too much about over spicing, it does not end up with a strong caraway flavor.
Ingredients
- 1 Pork roast
- 1 Coil smoked garlic sausage, cut into chunks
- 2 Apples, peeled and cut up
- 2 Onions, diced
- 1 Large jar sauerkraut, drained
- 3 Cloves garlic, pressed
- Potatoes
- Dry red wine
- Red wine vinegar
- Dill weed (dry) 3-4 tsp.
- Caraway seed (dry) 3 tsp.
- Thyme (dry) 1 tsp.
- Cracked black pepper 1 tsp.
Directions
Rub roast with vinegar, 2 garlic, dill, and pepper, set aside. Mix apples, sauerkraut, onions, 1 garlic, slosh of vinegar, caraway seed, dill, thyme, pepper, in roaster. Cover & place in a 300-350*F oven for 1/2 hour.
Put roast in roaster, reduce heat to 300*F, return to oven. Bake for 4 1/2 hours.
Partly cook the potatoes in microwave or on stove top. Add potatoes and cut up sausage for the last 1 1/2 hours.
Check every 45 minutes, adding a slosh of red wine from time to time to keep from drying out.
