Ingredients

  • One package flour tortillas
  • oil for frying
  • 1 can refried beans
  • 1/2 pkg. taco seasoning
  • shredded Monterey Jack cheese
  • Guacamole

Directions

Let tortillas come to room temperature. Cut into quarters with scissors. Fry tortillas in 1/2 inch of oil (at about 375 deg.) until crisp. Remove and drain on absorbent paper. Stir 1/2 pkg. of taco seasoning into refried beans, and heat in a saucepan. Place tortilla crisps on a baking sheet. Spread 1 tblsp. of beans on each tortilla, then sprinkle 1-2 tblps. cheese over each. Place under broiler and broil three inches from heat just until cheese melt, about 1 minute. Top with a dollop of guacamole. Serve hot.
