Ingredients
- 1 1/2 cups brown rice (cooked with salt & pepper)
 - 3/4 lb. shredded Monterey jack cheese
 - 1 small can whole green chilies, chopped
 - 1/2 lb. ricotta cheese (thinned slightly with milk or yogurt)
 - 3 cloves garlic
 - 1/2 cup grated Cheddar cheese
 - 1 large onion
 - 1/2 cup dry black beans, cooked according to package directions
 
Directions
Mix rice, beans, garlic, onion, chilies. Layer this mixture alternately in a greased casserole dish with jack cheese and ricotta cheese. End with rice mixture. Bake at 350 for 1/2 hour.
