Con Queso Rice Recipe

  Rice

Ingredients:
1 1/2 cups brown rice (cooked with salt & pepper)
3/4 lb. shredded Monterey jack cheese
1 small can whole green chilies, chopped
1/2 lb. ricotta cheese (thinned slightly with milk or yogurt)
3 cloves garlic
1/2 cup grated Cheddar cheese
1 large onion
1/2 cup dry black beans, cooked according to package directions

Directions:
Mix rice, beans, garlic, onion, chilies. Layer this mixture alternately in a greased casserole dish with jack cheese and ricotta cheese. End with rice mixture. Bake at 350 for 1/2 hour.
