Combine ingredients for crust and press onto the bottom of an ungreased 9-inch springform pan. In a mixing bowl, beat cream cheese and sugar; add eggs and vanilla, mixing well. Pour over the crust. Combine topping ingredients and spoon over filling. Place pan on a foil-lined baking sheet to prevent drips. Bake at 350*F (175*C) for 55 to 60 minutes or until the center is set and apples are tender. Cool completely on a wire rack before releasing sides of pan. Store in the refrigerator. Makes 12 servings.
