Ingredients
- 2 lb. ground beef
- 2 medium onions, chopped
- 1 clove garlic, minced
- 2 tblsp. olive oil
- 2 apples, peeled, cored and chopped
- 3 jalapeno peppers, seeded and sliced into thin strips
- 1/2 cup raisins
- 1/4 cup pimiento-stuffed olives, sliced
- 1/8 tsp. ground cinnamon
- 1/8 tsp. ground cloves
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/4 cup slivered almonds
- 2 tblsp. olive oil
- Hot cooked rice
Directions
Brown ground beef, onion, and garlic in 2 tblsp. hot olive oil. Add next 8 ingredients; simmer 20 minutes. Saute' almonds in 2 tblsp. olive oil until brown. Drain almonds and sprinkle over meat mixture. Serve over hot cooked rice.
Note: Meat mixture freezes well. To reheat, combine thawed meat mixture and 2 tbsp. water in a medium saucepan. Cook over low heat until thoroughly heated.
Yield: 6 servings
